Side Dishes

2 cans cr of celery or mush soup
½ cup milk
¼ tsp pepper
8 cups thinly sliced potatoes
1 cup thinly sliced onions
2 cup shredded sharp cheddar cheese
2-tbl margarine

Combine soup, milk & pepper. 
In 2 qt casserole layer potatoes,
onions, cheese, soup mixture.
Dot top with margarine. Sprinkle
with paprika.

Cover & bake 375 deg  1 hr.  Uncover bake 15 min or till done.

25-35 min   425 degrees  8 x 8 pan

1½ c corn muffin mix (1 box Jiffy Corn Muffin Mix)
1 egg, beaten
1/3 c milk
1 can cream style corn
1 sweet onion
1¼ c butter
1 c sour cream
¼ tsp salt
¼ tsp dillweed
1 c shredded cheese

Combine corn muffin mix, egg, milk and cream style corn.  Saute onion and butter.  Stir in onions into mix and pour into greased dish.  Mix together sour cream, salt, dillweed  and ½ c cheese and spread over batter.  Sprinkle with remaining cheese.

Bake 425 degrees for 25 - 35 minutes

1 (2 lb) pkg hash brown potatoes frozen
1 can mushroom soup
1 pt sour cream  (low-fat)
10 oz shredded cheddar cheese
1/3 cup grated onion
¾ cup butter melted
Crushed corn flakes or Raisin Bran

Mix all ingredients together and place
In a 3 qt casserole or flat baking dish.
Cover with crushed corn flakes or raisin bran. I used Raisin Bran and it was great!

Bake 350 F for 1 hour.

1 40-oz. can sweet potato
3/4 cup white sugar
1/2 cup melted margarine
2 eggs, beaten
1/2 tsp cinnamon
1 tsp vanilla

1 cup brown sugar
1/3 cup flour
1/3 cup melted margarine
1 cup chopped nuts

Preheat over to 350 degrees. Drain and mash sweet potato. Add all ingredients except topping. Mix thoroughly. Spread in 9x13 baking dish. Crumble together topping ingredients. Sprinkle over sweet potato. Bake for 25 to 35 minutes.

YIELD: 8 Servings


6 Baking potatoes
1 Onion; chopped
4 ounce Green chiles
4 ounce Black olives; chopped
1/4 teaspoon Garlic powder
1/2 teaspoon Lemon pepper
6 teaspoons butter or margarine
Aluminum foil

Scrub and chop baking potatoes into pieces, but do not peel.  Prepare 6-8 square pieces of heavy-duty aluminum foil, one piece per serving. Place equal portions of the ingredients on each foil square. Fold the foil in a drug-store type fold, sealing ends. Place on barbecue grill for about 45-55 minutes.
