| RAMEN NOODLE SALAD Karen Salter This is very good and a light lunch in itself 1 package coleslaw mix 5-10 green onions, sliced ¼ c slivered almonds, toasted 1 package Ramen noodles, crushed Sauce: ½ c sugar ¼ c cider vinegar ¼ c. oil 1 tbl soy sauce 1 packet from Ramen Noodles Toss onion and cabbage. Stir together with sauce. Toss in noodles and nuts right before serving. **** I add ½ c toasted sunflower seeds with the nuts. Instead of tossing noodles and nuts into the salad, I serve on the side for each to sprinkle on the top. That way, if there are leftovers, the noodles and nuts aren't soft. ********************************* |
| GOOD ORANGE SALAD Very good.. Carol Orange Jello follow directions on pkg ... Follow box directions for adding fruit.. add grated carrots and drained crushed pineapple. Before serving top with cool whip and then grated cheddar cheese. *************************** |
| CRANBERRY RELISH MOLD New Braunfeis Smokehouse, New Braunfels, Tx Very good … Carol 2 (3oz) pkg cherry gelatin 1 tsp unflavored gelatin 2 c boiling water 1 (16oz) can whole berry cranberry sauce 1 (7oz) can crushed pineapple ¼ c chopped celery fresh cranberries (for garnish opt) Mayonnaise Dissolve both gelatins in boiling water. Let cool slightly, then stir in cranberry sauce, Pineapple, and celery. Pour into a glass serving bowl or 6 cup mold that has been rinsed under cold water. Chill until firm, at serving time, dip mold briefly in a pan of hot water to loosen and unmold on to chilled plate. Garnish with fresh cranberries. To each serving add dollop of mayo on each serving as desired. Serves 8-10 ********************************** |
| CHINESE GREEN SALAD Serves 4-6 Lindsay Wagner Add dressing at the last minute. Very good..Carol 6 Napa cabbage leaves, large 1 medium green leaf lettuce ¼ hot-house cucumber (1/3 regular) 2 oz Chinese pea pods, stems & strings removed ¼ cup bean sprouts Ginger Tamari Dressing… below 1) Wash, and dry the cabbage. Slice leaves into ½-inch wide pieces and cut the stalks into slices 1/5 inch thick. 2) Wash and dry lettuce and tear into bite size 3) Cut the washed and unpeeled cucumber into thin slices. If a regular cucumber peel first. 4) Mix everything . Cover with ¼ cup of dressing and toss. Taste and add more if desired. Serve with crackers. ***GINGER TAMARI DRESSING*** Makes 1 cup 1 tbl finely grated fresh ginger 1 tsp honey 1 tbl natural tamari soy sauce 1 tbl white wine vinegar (rice vinegar) 2 tbl fresh lemon juice ¼ cup olive oil 1 tbl raw hulled sesame seeds 1) Put ginger, honey, tamari, and vinegar in a small bowl. Let stand for 5 min., then whisk to blend. 2) Add remaining ingredients and whisk again. Refrigerate. This keeps for 3 days.. ******************************** |
| GARBANZO BEAN SALAD Serves 6-8 .. . Lindsay Wagner This is a favorite & a hit at pot lucks ..Carol 2 tbl olive oil 1 tbl white vinegar (I use rice vinegar) salt and pepper ¼ tsp garlic powder 4 cups cooked garbanzo beans (2 can= 3 cups) 1 tbl pimentos chopped 2 green onions, finely chopped Combine all but beans, pimentos and onions, In a small bowl, and whisk. Add to the beans, pimentos and green onions, and toss well. Chill before serving.. ************************************* |
| WALDORF SALAD I love this.. Carol 2 cups diced unpeeled apples 1 cup diced celery ¼ cup coarsely chopped walnuts ½ cup raisins, or seedless grapes, halved 1 tsp lemon juice ½ cup cheese spread (below) Mix all ingredients and chill. Serve on salad greens. 6 servings Cal. 135 **** CREAMY SPREAD**** ½ cup Low-Fat Cottage Cheese 2 tbl Nonfat Dry Milk Powder In blender, mix until smooth. Chill to thicken before using. Yield: ½ cup Cal: ½ cup = 115; 1 tbl = 15 ********************************** |
