SALADS
RAMEN NOODLE SALAD
Karen Salter
This is very good and a light lunch in itself

1 package coleslaw mix
5-10 green onions, sliced
¼ c slivered almonds, toasted
1 package Ramen noodles, crushed

Sauce:
½ c sugar
¼ c cider vinegar
¼ c. oil
1 tbl soy sauce
1 packet from Ramen Noodles

Toss onion and cabbage.  Stir together with sauce.
Toss in noodles and nuts right before serving.

****  I add ½ c toasted sunflower seeds with the nuts.  Instead of tossing noodles and nuts into the salad, I serve on the side for each to sprinkle on the top.  That way, if there are leftovers, the noodles and nuts aren't soft.
