| PARMESAN CHICKEN ½ cup fine dry bread crumbs ½ cup grated Parmesan cheese ½ tsp oregano leaves crushed Generous dash pepper Generous dash garlic powder 4 lbs chicken parts 2 cans (10 ¾ oz ea) Chick or Mush soup 1-cup milk Paprika Combine crumbs, ¼ c Parm cheese, and seasonings. Coat chicken, arrange in shallow, dish 15 ½. X 10 ½. Bake 400 degree 20 min. Blend Soup & milk pour over chick. Sprinkle w/remaining cheese. Bake 20 min or till done. | HAWAIIAN CHICKEN Good company meal .. easy Sharon Vickers Very good… Carol 1 chicken or 4-6 chicken breasts skinned Flour, salt and pepper ½ cup butter SAUCE: ¼ c honey ¼ c lemon juice 1 tsp soy sauce Melt butter in 9x13 dish. Put chicken in dish having coasted both sides with flour and salt and pepper. Bake 30 to 45 min at 350 deg. Add sauce and return to oven for 20 min, turning chicken over. | CHICKEN REUBEN Leah Adams 1 package boneless skinless chicken breasts 1 bottle(large) thousand island dressing 1 large (about 32 oz) sour kraut 1 large brick of swiss cheese coat an ungreased deep dish baking dish with a layer of sour kraut. slice the chicken breasts into single portion slices(easier for serving and not getting a huge piece of meat) again, add the rest of the sour kraut on top of the chicken breats,spread evenly. Slice the swiss cheeses into as thin slices as you can manage,and lay it out,covering the chicken completely.It is ok to double layer if there is left over cheese. pour the bottle of thousand island dressing overtop the cheese, spread evenly. Bake at 350 for approximately 1 hour,or until the cheese and dressing is lightly browned and bubbling. A GREAT recipe for banquets,potlucks,or anytime. ******************************* |
| CHICKEN WINGS Hilda Mckay 3 Ibs chicken wings i cup cooking oil 1 cup flour 1 egg Cut wings in half: cut end piece off. Dip in egg that's been beaten and then in flour, fry in oil. SAUCE: 3 Tbsp. soy sauce 3 Tbsp water 1/2 salt 1 cup white sugar 1/2 cup vinegar Bring to a boil, pour over chicken wings that have been put in a baking dish. | CHICKEN BREASTS W/CLING PEACHES this is very good...Carol 2 chicken breasts, halved, skinned ½ cup all-purpose flour ½ tsp salt pepper 2 canned cling-peach halves in natural juice, drain & save juice 2 tbl brown sugar 2 tbl Marsala wine .. I use Apple Juice or juice from peaches 1 tsp dried leaf basil ¼ tsp ground allspice Rinse and pat dry chicken. Combine flour, salt and pepper. Dredge chicken in mixture, set aside. Heat large non-stick skillet over med-high heat; spray lightly. Add chicken and cook quickly until browned on both sides. Place in a medium size shallow baking dish. Arrange peaches around chicken; set aside. Measure reserved peach juice and add water to make up to 1-cup; pour into a small bowl, stir in brown sugar, wine, basil, and allspice. Pour over chicken and peaches; cover. Bake about 45 min. or until tender. I serve with rice and spooning juice over rice and chicken. 4 servings Cal: 252 Carb: 24 gm ******************************** |
| BAKED CHICKEN my husband really likes.. Carol 2 Chicken breasts, halved and skinned 1 cup fresh bread crumbs ¾ tsp paprika ¾ tsp onion powder ¼ tsp lemon pepper 1 tbl oil of choice Preheat oven at 400F. Rinse and pat dry Chicken. Place crumbs and seasonings in plastic bag; shake to mix. Add oil and shake again, 1 piece at a time. Place in a medium sized shallow baking dish, sprayed.. bake uncovered 1 hour or until tender. | CHEATERS CHICKEN CACCITORE INGREDIENTS: 6 skinless, boneless chicken breast halves 1 (28 ounce) jar spaghetti sauce 2 green bell pepper, seeded and cubed 8 ounces fresh mushrooms, sliced 1 onion, finely diced 2 tablespoons minced garlic DIRECTIONS: Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion and garlic. Cook on low for 7 to 9 hours. Serve! | SKILLET CHICKEN & RICE Carol Hallowell..why not use pasta boiled in chicken broth in place of rice? 1 cup chopped celery ½ cup chopped onion ½ cup chopped green pepper 1 (I use ½) tsp salt 1 tsp poultry seasoning 1 cup cooked chopped chicken 1 cup brown rice (cook in broth) 1) saute' celery, onion & gr pepper in small amount of oil (or broth) til tender 2) add chicken, salt, pepper & seasoning 3) continue cooking until chicken is heated 4) add veggies, cook & stir until dry and beginning to stick to the skillet.. ********************************* |
