These all sound so good...
PITCHER  CAKE

4 Beat beaten eggs
2 ½ c Milk
4 c Sifted flour 3 white/1 whole wheat
1/3 c Sugar
1/2  tsp Salt
1 tblsp  Baking powder
Fat or oil for deep frying (I used 2 inches of Canola Oil)
Powdered sugar (we also did a cinnamon-sugar sprinkle on some)

Beat eggs with milk and gradually beat in flour, sugar, salt, and baking powder. Beat until very smooth.  Heat oil in pan (I used a high sided skillet USE A THERMOMETER and for safety, NEVER leave the pan! Watch it carefully (heat to 375*---a thermometer is a very wise investment! )  adjusting your control to keep the temp even.  Mine stays at about number “4” on my stove dial setting of “Lo 2-3-4-5-6 High”.

For Pitcher cake, fill with batter and then pour a stream in a circular and criss/cross pattern over the hot oil then use a large “pancake turner” or spatula to lift the cake out.  Don’t make too thick!!!!  (Gets too mooshy bcz it doesn’t get cooked through)  Cook 2 minutes or  so.  For Funnel Cake… holding the opening of a funnel closed, fill the funnel with the batter. Open the end of the funnel and allow dough to run out in a stream into deep hot oil; Move the funnel to make a pattern, starting at the center of the pan and swirl batter outward in a circle. (Be sure to adjust and keep the heat at 375*)   Drain on paper towels and sprinkle with powdered sugar in a sifter. Makes about 20 cakes, depending on size.

SCRATCH FLAVOR W/ BOX  ...LEMON PIE FILLING

Don't Use Instant Pudding!

Prepare box Lemon Pie Filling as directed on box..... When pudding is done.. remove from heat and add:

1 - 2 tbl real Butter
good squeeze of lemon juice

Stir till melted, proceed as recipe on box.. taste's like made from scratch.

OLD FASHIONED TEA CAKES
Carol .. I love these.. not real sweet

½ cup Butter softened
1 cup granulated sugar
2 large eggs
½ tsp salt
½ tsp baking soda
¾ tsp baking powder
2 cups sifted all-purpose flour
1 tsp vanilla or lemon extract

Heat over to 35 degrees

In mixing bowl, cream butter &
sugar; add eggs and mix well.
Combine all dry ingredients; stir
into egg mixture.  Add extract.
Roll out on a floured surface and
Cut into squares 3x3 inch or ?..
Bake 15 min on lightly greased
cookie sheet, or till done.  Cool.

Makes 16 cookies.

CRANBERRY  PIE

2 cups fresh cranberries
1/2 cup sugar
2 eggs
1 cup sugar
1/2 tsp. vanilla
1/2 melted butter or shortening
1 cup flour

1) Preheat oven to 325 degrees
2) Place cranberries in a 10" pie pan that has been srpayed with cooking spray
3) Sprinkle 1/2 cup sugar over cranberries
4) Mix eggs, 1 cup sugar, vanilla, butter and flour and pour over cranberries.
(Egg mixture and cranberries can be reversed for a more colorful pie)
5) Bake for 45 minutes to 1 hour.

*Serve with vanilla ice-cream! Yummy!

TOFFEE  COOKIES  DESSERT

saltine crackers
1 cup brown sugar, firmly packed
1 cup real butter, do not substitute
chocolate chips,
large pkg. chopped nuts   
   
Line cookie sheet with foil. Place full layer of saltine crackers on sheet.
Boil for 3 minutes: brown sugar and butter.  Pour boiled mixture over crackers and spread evenly.   Bake for 5 minutes in a 400 degree oven.
Remove from oven, immediately pour on a large package of chocolate or white chocolate chips. Let set for 1 minute, then spread evenly.  Sprinkle top with chopped nuts  as desired, and pat into chocolate.  Freeze for about
1 hour and break apart to serve. May be stored in the freezer.

PEANUT  BUTTER  BARS

½ cup butter
¼ cup smooth peanut butter
¾ cup brown sugar packed
1 egg
1 tsp van
1 ¾ cup flour

mix &  pack into a greased 9x9 pan ..
bake 350 30  min  cool,  frost &  cut 

ICING:
1 cup semi sweet choc chips
½ cup smooth peant butter
mix then dissolve over low heat ..
spread on cooled bars.. cut

NANA'S  APPLESAUCE CAKE
My grandmothers special cake.. so good and easy.. Carol

1½ cup applesauce
dissolve with:  2 tsp baking soda
2 cups flour
1 cup sugar
1 cup raisens
½ cup butter
1 tsp cinn
1 tsp clove
1 tsp vinegar

Mix, add to sprayed pan.. bake 325..

PIE  CRUST

1 cup + 2 tbl flour .. (use a good brand)
½ tsp salt
1/3 cup oil .. (use wesson or another good veg oil)
2 tbl  ice water

Don't over handle and roll gently..
over handling make tough crusts.. 
Roll between waxed paper ..
bake 425..  12-15 min.

PUMPKIN CHEESE CAKE

freezes real good.. taste great.

for 1 pie:

1 small can pumpkin
spices called for on back of can for pie
sugar called for on the back of can for  pie
8 oz cream cheese..
1 cup cool whip
1 baked pie shell or graham cracker crust.

whip w/ mixer.. pour into baked shell .. chill or freeze to set .. delicious ..
