Most recipes can be adjusted for convection oven use by decreasing the temperature by 25 degrees F and decreasing cooking time about 25%. Dishes with cooking times over 45 minutes, and that might dry out too much (like lasagna, or meatloaf) you should cover for the first half of the cooking time, and then remove the cover
It's always better to use pure unsalted Butter when making cookies and candies..
It takes 2 egg whites to equal one whole egg in a recipe.
Applesauce can be substituted for shortening in many recipes.
Can use less sugar in most recipes then called for.. I wouldn't change amount called for in candy though.
2 tbl Dried Skim milk added to 1 cup fat-free milk in recipes, will make a richer milk w/o the fat.
Apple juice is good alternative for wine in recipes.
